H-E-B Cooking Connections shares recipes for Easter gatherings

BRYAN, Texas (KBTX) – Easter Sunday is four days away, and many people are preparing to gather with their families.

If you’re hosting or taking a dish, Lisa Fritz with the H-E-B Cooking Connection shared some recipes to make your decision-making easier.

Bacon and Broccoli Salad

Ingredients:

2 large heads of broccoli1 small red onion, diced4 slices bacon, chopped or 1 package real bacon pieces1 cup shredded cheddar cheese1/2-1 cup Better Than Good Bacon Vinaigrette1/2 cup mayonnaise1/3 cup dried cranberries1/3 cup chopped pecans or sunflower kernels, optional

Directions:

Cut the florets off the top of the broccoli and place in a large bowl.

Add the onion, bacon, cheddar cheese, cranberries and nuts to the bowl and toss to combine.

Combine mayonnaise and bacon vinaigrette in a separate bowl.

Add dressing to the large bowl and mix thoroughly. Chill before serving.

Cinnamon Honey Butter

Ingredients:

1/2 cup butter, softened1/4 cup powdered sugar1 tablespoon honey1/2 teaspoon vanilla1 1/2 teaspoons cinnamon1/8 teaspoon salt

Directions:

With electric mixer, cream butter until fluffy. Add remaining ingredients and continue to beat until combined. Serve with rolls.

Holiday Lamb Chops

Ingredients:

H-E-B Natural Lamb Rib Chops3 tablespoons Rustico Unfiltered Extra Virgin Olive Oil1 tablespoon Adams Reserve Holiday RubZest and juice of 1 lemon2 lemons, halved

Directions:

Place lamb chops in a large zipper bag. Combine olive oil, Holiday Rub, lemon zest and juice. Pour over chops in bag and seal, squeezing out as much air as possible. Refrigerate for 4 hours to overnight.

Heat grill. Remove lamb from marinade and grill 2-3 minutes, flip and cook to desired degree of doneness (130-135 F). Place lemon halves on grill until lightly charred. Remove lamb from grill and rest for 5 minutes. Serve with grilled lemons and Mint Yogurt sauce (recipe follows):

1/2 cup full milk yogurt2 tablespoons Olive Oil1 tablespoon chopped fresh mint4 cloves garlic, minced

Salt to taste

Easy Peach Cobbler Cake

Ingredients:

1 29 oz. can sliced peaches in syrup – do not drain1 box yellow or butter cake mix1 stick butter½ bottle Fischer & Wieser Charred Peach Bourbon Glaze1/2 to 1 cup Honey Toasted pecans – find them in Healthy Living

Directions:

Heat oven to 375 F and coat a 9 x 13 cake pan with non-stick spray. Pour peaches into pan and cut in smaller pieces. Sprinkle dry cake mix on top. Melt butter and Fischer & Wieser Sauce in small pan and stir until combined. Pour warm mixture on cake mix. Chop pecans, then sprinkle on top of cake mixture. Bake in oven for 45-50 minutes, or until nicely browned around the edges. Let cool for 10 minutes before serving.
